As I may have mentioned before I adore raw cacao, but what is it really and why do I love it oh so much? Well, for starters the tree is called cacao and the harvested products are cocoa. The standard cocoa that most consumers are familiar with is a highly processed form of the real cocoa far removed from it's harvested raw form, which is packed with phyto-nutrients and antioxidants. So I think it's easier to distinguish the two if using different names. Raw, unprocessed cocoa is quite good for you and has only one gram of sugar per cup, but what happens when greedy mankind gets their little grubbies on something good? They ruin it, of course, and we're left with the Frankenstein version of grossly manufactured chocolate stuffs. Although, in the greedy grubbies defense, Frankenstein chocolate does last on the shelves for ages and ages, so what if it's making people sick. Okay, so that was my rant, let's move on to find out why raw cacao is the bees knees.
